Chef’s Bacon & Berry Salad Recipe To Celebrate Bacon Day!
It’s finally here, one of our favorite days of the year, Bacon Day! It’s true that bacon can make just about anything taste delicious. To celebrate and pay proper respect to this much loved food Proof of the Pudding Executive Chef Howard Garnel is sharing one of his favorite bacon recipes – Bacon and Berry Salad! BACON & BERRY SALAD
Ingredients:
Kale
Applewood Bacon – 4 strips
Shallots – 3 whole
Champagne Vinegar – 3 tsp.
Sugar – 1/4 tsp.
Salt – 1 tsp.
Whole Grain Mustard – 2 tbsp.
Olive Oil – 5 tbsp.
Crumbled Cambozola Cheese – 1/4 cup
Raspberries – 1/2 cup
Pan fry 4 strips of applewood smoked bacon in skillet till crispy
Remove bacon from skillet and crumble, reserve drippings
Toss 3 peeled shallots with reserved bacon drippings and roast in 350º oven for 25 minutes
Blend roasted shallots with 3 tablespoons of champagne vinegar, 1/4 teaspoon of sugar, 1 teaspoon of salt and 2 tablespoons of whole grain mustard. Slowly add 5 tablespoons of olive oil while blending.
Massage the Kale with the dressing and then top with crumbled Cambozola Cheese, Raspberries and reserved bacon crumbles.
